Production of Skin-whitening and Anti-wrinkle Functional Peptide from Tenebrio Molitor (Mealworm) using Cheonggukjang Strain

Abstract

In this study, chemical and enzymatic hydrolysis of protein from mealworm (Tenebio molitor) were carried out to produce functional peptides with skin-whitening and anti-aging properties. In order to produce functional peptides, mealworm protein was hydrolyzed using chemicals, commercial enzymes, and Bacillus natto protease isolated from cheonggukjang. The results confirmed that mealworm proteins were hydrolyzed into peptides smaller than 2.0 kDa by B. natto protease and indicated that B. natto protease showed equal or superior results over commercial enzymes and chemical hydrolysis in comparison of protein hydrolysis. Tyrosinase and collagenase inhibition activities of mealworm peptides were measured as indicates of skin-whitening and anti-wrinkle properties, respectively. Tyrosinase inhibition activities of 33.2% in 6 M HCl, 40.2% in Alcalase, and 31.7% in B. natto were measured. Collagenase inhibition activities of 35.4% in 6 M HCl, 66.0% in Alcalase, and 66.7% in B. natto protease were obtained. The results suggest that B. natto protease isolated chenonggkjang comparable to that of commercial enzymes in the production of functional peptides and can be used for the production of skin-whitening and anti-wrinkle peptides from mealworm.
